This Modena balsamic vinegar from La Chinata is of Italian origin, hailing form the region of Emilia-Romagna in northern Italy. Modena vinegar is unlike other vinegars in that it's made directly from the must of the wine, and old and new vinegars are blended during the production process to obtain the best results. Once the right blend has been achieved, the vinegar is aged in wooden barrels for 4-5 years at least. The resulting flavor is strong and slightly sweet. This balsamic vinegar is great as a salad dressing, and because its flavor is so strong, it's not necessary to add much - in most cases, a teaspoon per person is plenty. It's also an excellent accompaniment to grilled meats and other hot items: add the vinegar just before you remove the food from the heat. Balsamic vinegar takes its name for its early use as a palliative for rheumatism - it was used as a balm, hence 'balsamic,' being rubbed onto the affected part. It should be stored in a cool place, away from direct sunlight, sources of heat and from products that have a strong aroma. The sediment that sometimes occurs at the bottom of the bottle does not mean there's anything wrong with your vinegar - it's a natural component of this type of vinegar! In Spanish, this product is called, "Vinagre balsámico de Módena La Chinata."

The story of la Chinata begins in 1932, when the family’s ancestors began to press olives in the Sierra de Gata region. At that time, olive oil was obtained in very simple mills: the olives would be brought into the stone mills, or “epiedros,” and crushed to a paste, which would then be pressed to extract the oil. La Chinata is dedicated to the production of gourmet products and cosmetics based on premium extra virgin olive oil.
